[Consumerwide_Jinil, Kang Reporter / Yohan, Bok Reporter] Have you ever thought about what to do in order to protect our planet and our health? There could be many answers, and here are the people who propose to change the earth through a way of dining. They say that with nutritious, balanced, organic vegan dining, we can have a future where me and the planet are both healthy, non-violent, and co-existing. Not only so. The recipe for this dining menu is incredibly easy. This could be a welcoming idea for value-based consumers who prioritize the environment, health, and life.

On the 30th of March, a book concert for 'Diet kitchen that boots Immune system, recommended by Dr. Lee Sihyoung ' (written by Lee and Kang Seongmi) was held at the Cell-clinic, Gangnamgu, Seoul. The co-author of 'Diet kitchen that boots Immune system', Dr. Lee Sihyoung and Kang Seongmi, a director of Organic Culture Center Corp, both came and talked about human health and the earth's environment. After the talks, they shared with the participants a spring organic vegan meal based on the traditional Korean herbal vegetarian diet recipe.

First of all, Dr. Lee Sihyoung said, "Boosting the immune system and prevention of obesity matter in the world where the immune system has collapsed because of the wrong dining habits of humanity. In particular, cancer can be a typical disease caused by a decline of the immune system. If you wish for the long-run in your life, you have got to boost the immune system while preventing obesity."

For a practical step, he advised on nutritionally well balanced-light organic vegan dining (based on healthy ingredients) on regular days. In particular, he recommended traditional Korean dining. Lee said, "Nutritionally well balanced, organic vegan dining is good for the body as well as mental health. For instance, if you are not feeling good, you won't digest well and may get stomachache, and vice versa. The gut and brain are tied closely and influence each other. For this reason, man can maintain his health when his gut and brain both have a good immune system. The immunity is made 70% in the gut, and 30% in the brain.  The immune system functions well when the bacteria in the gut is healthy. Hence, balanced dining cooked with eco-friendly ingredients is important. Taking fermented food, vegetable fiber, and oligosaccharide is necessary.

In these concepts, traditional Korean dining is one of the best choices. Because it is a dining dish with a combination of 'Side dish culture' that uses various ingredients that support the immune system and femented food which include Kimchi, Doenjang (fermented soybean paste), Ganjang(soysauce), 'Namul(seasoned vegetable) culture' with plenty of phytochemical, and 'Seasoning culture' with garlic and chilies. But, in the condition that it is made of organic whole grains and natural vegetables, in order to take the vitality of nature as it is. (vegan-basis) If taste and nutrition balances are added, it will be helpful for boosting the immune system and losing weight."

Kang Seongmi (the director) demonstrated and shared the organic vegan dining recipe which is easy to practice on regular days with participants. Kang Seongmi, the director, also took some time to demonstrate and share the organic vegan dining recipe which is easy to practice on regular days.

In addition, Kang Seongmi, the director, passed on the organic vegan life which could change the future of us and the planet at the Book concert.

She said, "This book concert is a unique book concert where you can see the combination of health, food, and environment. The organic vegan life doesn't only seek vegetarian meals. But, it is a type of life that honors life on the earth and morality. Organic vegan dining is only a small part of doing the organic vegan life. We call it the 'food table of non-violence and coexistence'. Agricultural products cultivated with excessive agricultural chemicals and insecticides and chemical fertilizers aren't good for the land nor us. This is clear violence. For this reason, I see that any dining made with ingredients that care about the environment is a non-violence and a way for co-existence between man and land in a healthy way. Organic vegan dining is one of the good ways to change future health which spares us and the planet."

Kang Seongmi (the director) also demonstrated and shared the organic vegan dining recipe which is easy to practice on regular days with participants. It is bean sprouts and water parsley Gukbap (rice soup) made based on a traditional Korean herbal vegetarian diet recipe, and Ueolgalie (winter growing) cabbages.

She said, "These menus are all made with organic vegetables, which are beneficial for the environment as well as our guts. The difference from the Jeonju bean sprout Gukbap is solely made with seasonal water parsley and bean sprout."

A female (40 years old) who participated on that day said, "I read the book, 'Diet kitchen that boots the Immune system'. So I rushed to come after hearing about this book-concert. The story of the book might be stamped in my memory because of the professor Lee was telling us on his own. I enjoyed the spring vegan dining as well. I might cook these herbal dishes frequently at home. It is easy to cook and healthy while being tasty."

Another female participant said, "I am enthusiastic about health while I think about better ways for the environment often. So, it touched me that organic vegan dining can resolve both health and environmental issues. I will try to get involved in practicing organic vegetable dining in everyday life."
